This chicken salad recipe is creamy, slightly sweet, with a probiotic mayo for that belly love! Paleo and Whole30 approved!
Food can be created to promote healing and vitality. I am passionate about supporting beneficial bacteria in the gut. This chicken salad meets the criteria for that belly love. Not only is it creamy and slightly sweet, but it has both prebiotics and probiotics to help support a healthy digestive tract and immune system.
Makes 2-4 servings
- 2 c cooked chicken, chopped
- 3/4 c grapes, sliced
- 1/3 c leeks, sliced (prebiotic)
- 3/4 c celery, diced (about 2 stalks)
- 1/4 c almonds, sliced
- 1/4 c salty kombucha mayo (probiotic) or homemade mayo (with live enzymes)
- 1 tsp garlic granules
- sea salt and pepper to taste
- Combine all ingredients into a medium size bowl.
Serve over greens of choice (I like mixed) and add some crunchy cold vegetables on the side like cucumber and baby carrots.
This recipe can be made with mayonnaise that is not a probiotic and it will still taste great! There are many brands coming to market that contain healthy fats. Read labels before purchasing or make your own version using avocado oil or light olive oil.
