Just because something is simple, does not mean it is easy. For example, cutting the grass is simple. Start a lawn mower, push it across the yard, and make it pretty by walking straight lines. For me, this process is simple but not easy. With any task, the more you practice the easier it becomes. Prepare simple healthy foods and do it often. This makes it easy. My favorite Simple Apple Snack is both simple and easy!
Slice a crisp apple however you like. Place it nicely on a plate and top it with almond butter and delicious coconut butter. Have as a snack or add to a meal, as the fiber from the apple and butters slow the rise in blood sugar and help keep you energized. The almond butter and coconut butter both provide a nice dose of filling and healthy fat.
A word about coconut butter. What is it? The meat from the coconut is blended until is becomes the consistency of a butter just like almonds or peanuts are made into a butter. The texture can be crumbly like pictured or creamy and spreadable. It depends on the temperature of your kitchen. You can easily warm it to get that creamy decadent feel or crumble it on top like mine. Find it in the nut butter aisle of a health food store, Sprouts, or maybe your regular grocery store.
